On /wp-admin/admin.php?page=eventon&tab=evcal_tx#evotx2 I see the Email Subject Line field, but I don’t see any instructions on what variables can be used there. Can I really not have the event title be part of the email subject?

Unfortunately, no variables can be used there at the moment. However please create a new ticket and select Feature Request as category so others can vote on your idea and get it moved into development faster. OR You can send us a customization job request by creating a new ticket in here and selecting Customization Request as the category.
Will do! Thankfully, this client only has one event at a time, so I can just hard code the Email Subject with the Event Name, as they wish.
