The EventCard shows a list of names of people that have answered Yes to an event, and that will be attending. The same goes for people that have answered No to an event, and that will not be attending. That is really nice for a community of people. Matches perfectly what I am looking for. However, I also need the list of people who are interested in an event. How can this list become visible on the EventCard in exactly the same way, same visuals etc. ?

Thank you for your great suggestion, at the moment it is not supported. However please create a new ticket and select Feature Request as category so others can vote on your idea and get it moved into development faster.
You can add the list manually using Custom Meta Fields:
