Ok I Have a solution for this also 🙂

HEre is the process:
1. You will create the variations with each price and description for variation, same as you did till now.. We will add to be either: Full Price or Partial Payment.
2. You will be able to add your self w/e text you want each time, so basically you will be able to add the text s you want, with any price and how much left to be payed etc
