So you can set non logged-in visitors to upload an image when creating an event, but you cannot do it for logged in users, whom you set a specific role for, like contributor?

This depends on the theme, which theme are you using? Maybe they have removed this feature.

Is it possible to change the colour of the Month Arrows and the MONTH YEAR (example JANUARY, 2020)

Event Lists shortcode [add_eventon_list] is not compatible with Month Arrows, I am afraid. Please change it to [add_eventon] if you want to see Month Switching arrows.
