Before update please go to EventON > enable “Do not delete eventon settings & data when EventON is uninstalled” or use FTP Method (this link will further explain the process it).

I have restored a backup so the events are backup.
Remaining question is how they could have gone missing in the first place. It’s scary that can happen. What did I do in the described steps that caused everything to be deleted?

I am sorry but I am allowed to assign tickets to developers only when there is something wrong with EventON. Unfortunately, in your case it’s clearly a customization job request.
