This should resolve assigning different WC product to ticket from event ticket settings.

Would you mind sharing a screenshot of the failed email notification? 

when someone RSVP = NO — on our test server, When admin notice emails are turned off — nothing get sent out except out Sucuri alert that a new RSVP post was created.

So, please share the screenshot of how those emails look for you and then we can pin point where it is coming from.
